Blueberries are your dog’s best friend — they’re packed with goodness! Most dogs love them, particularly if they are crushed a little so the sweet juice is exposed. Try adding a handful of crushed blueberries to your dog’s evening meal or blending blueberries with Canine’s Curry with Bark-mati rice.
Preparation time: 20 minutes, plus making cookies
400 g (13 oz) boiled swede or sweet potato, mashed
2 tablespoons peanut butter (no added salt or sugar)
1 teaspoon ground nutmeg
1 egg yolk
2 Apple and Cinnamon Lollipups made as 7-cm (3-inch) discs
50 g (2 oz) blueberries, plus extra to decorate
2 mint sprigs
1. Combine the swede or sweet potato, peanut butter, nutmeg and egg yolk in a mixing bowl. Place the cookies on a flat serving dish. Place the cookie cutter used to cut the cookies over the top of one of them to form a mould. Half-fill the mould with the mashed swede mixture. Press down with the back of a spoon to compact.
2. Layer half the blueberries over the swede and press down again to compact. Fill the mould with the remaining swede and compact again. Carefully remove the mould and repeat with the second cheesecake. Leave to cool, then decorate each cheesecake with 3 blueberries and a mint sprig. Store any leftover cheesecakes in the refrigerator for up to 24 hours, or the freezer for up to 3 months.
